Pumpkin Bread

I'm nesting...any of you who are or have been pregnant know the process. I'm down to 3 weeks left and can hardly stand it. The nesting phase has hit HARD! I am too tired to do any major changes with out Honey's help...so those projects get done in the evenings. After my afternoon nap of course. So, during the day, baking is about as much as I can handle.

I found a really good recipe for Pumpkin Bread. The recipe is SUPER easy and makes tons of bread. I made one batch on Saturday, just to try it out. It was such a hit, and I had pumpkin filliing leftover, so I made the rest today. I made a double batch of the batter and it made 4 mini loaves, 4 medium loaves, an 8x8 square cake, and a small round cake. Needless to say, we won't go short on pumpkin bread this winter!

Pumpkin Bread:

1 tsp Nutmeg
3 cups Sugar
4 eggs
1 tsp cinnamon
1 1/2 tsp salt
1 cup Vegetable oil
1 cup canned pumpkin
2/3 cup water
3 cups Flour
2 tsp Baking Soda
Sift the flour and baking soda together and set aside.
MIx the nutmeg, sugar, eggs, cinnamon, salt and oil together in mixer.
Add the pumpkin and water. Blend Well.
Gradually add the sifted flour and baking soda. Pour batter into 2 greased loaf pans.
Bake at 350 degrees for 1 hour or until done.
